Living in Southern California I really miss Fall.. you know the season the rest of the country has. Trees turning beautiful colors, weather getting colder, pulling out favorite jeans and sweaters. Nothing beats a beautiful sunny cold fall day! Well I am trying to find new ways to enjoy the season living here in "perfect" 70degree weather. First attempt is going to be squash. Don't really cook with it or even know what to do with it. I kept hearing about spaghetti squash. Trader Joe's had some so I figured I'd go for it!
Spaghetti Squash
1 large spaghetti squash (the long yellow ones)
jar of spaghetti sauce
any other add ins- Henrys (local market/health food store) has the BEST basil turkey sausage that we crumbled and cooked to add in the sauce. Could add veggies too like broccoli, onion, garlic(always a good add in!), shredded carrots etc..
Basically you poke the squash a few times with a fork and pop it in the microwave for 12 mins or so. Until skin gives some. Let it cool. Cut it in half and take out the seeds. Then pull a fork through it and it comes right out in "string" pieces. Pour sauce over it and that's it!! So simple and so yummy! We actually bought another one for this week's meals. Going to try TJ's chicken sausage with it this time.
