Flavorful Green Chili Chicken

Tonight consisted of a Hubby's favorite. Green chili, mushroom, swiss cheese chicken!
Grill up some chicken breasts. Grind a little salt/pepper over them first.
Then saute a few slices of onion, smidge of garlic, two handfuls of sliced mushrooms, and a can of diced green chilies. (I don't use butter to saute. I just use my nonstick pan, maybe a little olive oil but not really needed for this)
When the chicken is done leave on grill and top with mushroom/chili mixture then top that with cheese! We normally use swiss but decided on pepperjack tonight. Husband's family omits diced green chilies in saute mixture and uses canned whole green chilies and tops that in between mushrooms and cheese on top of chicken.
Could easily take away some of the fat by omitting the cheese or being sure to get lowfat sliced cheese.
I'm not really a chicken lover, but really enjoy the flavors in this meal. It's also good to add it to a bun a make a sandwich out of it!

Satisfying First Time

Living in Southern California I really miss Fall.. you know the season the rest of the country has. Trees turning beautiful colors, weather getting colder, pulling out favorite jeans and sweaters. Nothing beats a beautiful sunny cold fall day! Well I am trying to find new ways to enjoy the season living here in "perfect" 70degree weather. First attempt is going to be squash. Don't really cook with it or even know what to do with it. I kept hearing about spaghetti squash. Trader Joe's had some so I figured I'd go for it!

Spaghetti Squash

1 large spaghetti squash (the long yellow ones)
jar of spaghetti sauce
any other add ins- Henrys (local market/health food store) has the BEST basil turkey sausage that we crumbled and cooked to add in the sauce. Could add veggies too like broccoli, onion, garlic(always a good add in!), shredded carrots etc..

Basically you poke the squash a few times with a fork and pop it in the microwave for 12 mins or so. Until skin gives some. Let it cool. Cut it in half and take out the seeds. Then pull a fork through it and it comes right out in "string" pieces. Pour sauce over it and that's it!! So simple and so yummy! We actually bought another one for this week's meals. Going to try TJ's chicken sausage with it this time.

Orange Roughy

Last night's dinner, thanks to allrecipes.com. I get a lot of base recipes from here and enjoy changing them around. Love their site.
Citrus Orange Roughy
4 orange roughy fillets (I would assume it would be good with tilapia too)
1 orange (do not use orange juice)
1 lemon
lemon pepper
4green onions cut up

pour a little olive oil in a pan, heat over medium. Add the fish. Squeeze(*tip-if you roll the fruit on the counter before cutting it in half it juices a lot easier in your hand)the orange and lemon over the fish and then sprinkle with lemon pepper. I'm not the biggest lemon pepper fan so i sprinkled a little then added some regular pepper too. Cook it a little then throw the green onions on top. The juice will reduce and become a nice sauce.

I'm going to say 7mins to cook.. just to get the juices reduced.. I'm going to try to find a nutrition chart that I can post on here too.

We just threw together some sides and some leftovers, but it would be super yummy over rice and maybe even a dash of white wine in the sauce (will try that next time!)

Who and Why?!?

I love food! My husband and I both enjoy cooking but don't cook well together. We always have different visions of the meal. We have a little girl who's 3 and a boy who's almost 1. Any meal time can get a bit crazy at our house.
Both of our children have medical conditions, though you wouldn't know it from looking at them. Our daughter had open heart surgery at 18months to correct holes in her heart- they scariest thing I have ever been through! With our son we found out through newborn screening that he has a rare metabolic condition MCAD (Medium Chain Acy-Coenzyme Dehydrogenase Deficiency) FOD Information It's suggested that they both be on a "heart healthy diet" especially our little boy. His diet needs to be kept around 30% fat.
We're taking on his condition and changing our kitchen pantry forever. I'm on a mission to make great low-fat meals that taste good, are easy to make, and the kids will eat!
We are food people!
